Lanzarote cuisine is very tasty. You will find the influence of Spanish, but also South American and African cuisine in many Canarian specialities. Besides meat and fish, the staple foods are potatoes and pulses. General dishes Conejo en salmorejo: Rabbit marinated and braised in an earthenware pot with herbs, garlic, saffron and chilli. Gofio: A flour made from roasted grains of maize or other cereals. Usually sweetish. Used as a seasoning, but also made into a paste with water or vegetable oil. Eaten with bread, soup or on its own. Gambas al ajillo: Prawns fried in garlic oil. Lapas: limpets grilled with lots of oil and garlic Mojo: Ubiquitous sauce, served with "papas arrugadas" and fish; as mojo picón (red) with lots of chilli or as mojo verde (green), milder and with lots of herbs Papas arrugadas: Wrinkled jacket potatoes with a salt crust; the skin is eaten as well. Pimientos de padrón: Grilled peppers with sea salt crust Puchero canario: A hearty stew of different kinds of meat, paprika sausage, chickpeas, beans, pumpkin and other vegetables. Queso blanco: Mild goat's cheese, tastes good in a "bocadillo" (sandwich) or with olives. Zarzuela: Canarian version of bouillabaisse with several types of fish, potatoes, tomatoes and onions.
